An 8-inch cast iron pan for one or two people — eggs, a couple of chops, cornbread, reheating last night's leftovers. Nitrided cast iron, so it is meaningfully lighter than a conventional skillet of the same size, which matters when it is going in a drawer in the back of the truck rather than on a kitchen hook.

GuideCast is nitrided cast iron. Nitriding is a heat treatment that hardens the surface of the iron itself to resist corrosion — GSI's words are “nitrided surface treatment helps to prevent corrosion.” It is not a sprayed-on coating, so there is nothing to chip, flake or peel off into your dinner.

GSI states the polished bottom is “suitable to cook on a stove, induction stove, in the oven, broiler, or campfire grill.” 10 inch and 12 inch versions are listed separately.

Care, stated plainly

GSI's own care notes for GuideCast do not fully agree with each other. One place tells you to hand wash with warm water and salt; another says warm, soapy water. Both texts agree on everything that actually matters, so follow this: wash it before first use with hot water and mild detergent and dry it immediately. Use nylon pads or scrapers only — metal pads and scrapers can damage or remove the surface. Lift stubborn stains with a paste of coarse salt or baking soda and warm water. Let it dry completely before it goes in a box or a bag. And never rinse or submerge a hot pan: the thermal shock can damage the iron.

GSI does not say anywhere that GuideCast ships pre-seasoned, so we are not going to tell you it does. Treat it as bare iron on arrival — wash, dry, then wipe a thin film of cooking oil over the cooking surface and heat it briefly before the first meal. That is our advice, not a GSI instruction, but it is standard practice for cast iron and it costs you five minutes.
