GSI GuideCast Dutch Oven — 5 qt, Nitrided Cast Iron
$79.95
A 5-quart nitrided cast iron Dutch oven, 20–40% lighter than ordinary cast iron, with a cast iron trivet included. Stove, induction, oven or campfire.
A camp Dutch oven you can actually lift. GuideCast is cast iron with the weight taken out of it: GSI's own figures for the GuideCast line run from 20% to 40% lighter than conventional cast iron depending on which of their pages you read, and at 10.1 lb for a 5-quart oven that is believable. It measures 11.8 x 11.8 x 7.2 inches and includes a cast iron trivet, which GSI's feature list also calls a stand.
GuideCast is nitrided cast iron. Nitriding is a heat treatment that hardens the surface of the iron itself to resist corrosion — GSI's words are “nitrided surface treatment helps to prevent corrosion.” It is not a sprayed-on coating, so there is nothing to chip, flake or peel off into your dinner.
The bottom is polished, and GSI states it is “suitable to cook on a stove, induction stove, in the oven, or over a campfire.” That is the full range — this is one of the few pieces in GSI's cookware line with no heat restriction at all. Braise at home on the induction hob, then take the same pot out and bury it in coals.
A 7-quart version of this oven also exists if you are feeding more than four; ask us and we will price it.
Care, stated plainly
GSI's own care notes for GuideCast do not fully agree with each other. One place tells you to hand wash with warm water and salt; another says warm, soapy water. Both texts agree on everything that actually matters, so follow this: wash it before first use with hot water and mild detergent and dry it immediately. Use nylon pads or scrapers only — metal pads and scrapers can damage or remove the surface. Lift stubborn stains with a paste of coarse salt or baking soda and warm water. Let it dry completely before it goes in a box or a bag. And never rinse or submerge a hot pan: the thermal shock can damage the iron.
GSI does not say anywhere that GuideCast ships pre-seasoned, so we are not going to tell you it does. Treat it as bare iron on arrival — wash, dry, then wipe a thin film of cooking oil over the cooking surface and heat it briefly before the first meal. That is our advice, not a GSI instruction, but it is standard practice for cast iron and it costs you five minutes.
