GSI GuideCast Deep Frypan — 10 in., Nitrided Cast Iron

$64.95

A deep-sided 10-inch nitrided cast iron frypan, roughly 20–40% lighter than ordinary cast iron. Stove, induction, oven, broiler or campfire grill.

SKU: 573814 Categories: , Brand:

The deep one. Same nitrided cast iron as the rest of the GuideCast line, but with tall sides, which makes it the pan for anything with liquid in it — a one-pan chili, sausages and peppers, shallow frying, a cobbler. GSI quotes GuideCast as roughly 20–40% lighter than conventional cast iron (their own figures vary between 20% and 40% depending on the page, so take it as “noticeably lighter” rather than a precise number).

GuideCast is nitrided cast iron. Nitriding is a heat treatment that hardens the surface of the iron itself to resist corrosion — GSI's words are “nitrided surface treatment helps to prevent corrosion.” It is not a sprayed-on coating, so there is nothing to chip, flake or peel off into your dinner.

GSI states the polished bottom is “suitable to cook on a stove, induction stove, in the oven, broiler, or campfire grill.” Also available in 12 inch.

Care, stated plainly

GSI's own care notes for GuideCast do not fully agree with each other. One place tells you to hand wash with warm water and salt; another says warm, soapy water. Both texts agree on everything that actually matters, so follow this: wash it before first use with hot water and mild detergent and dry it immediately. Use nylon pads or scrapers only — metal pads and scrapers can damage or remove the surface. Lift stubborn stains with a paste of coarse salt or baking soda and warm water. Let it dry completely before it goes in a box or a bag. And never rinse or submerge a hot pan: the thermal shock can damage the iron.

GSI does not say anywhere that GuideCast ships pre-seasoned, so we are not going to tell you it does. Treat it as bare iron on arrival — wash, dry, then wipe a thin film of cooking oil over the cooking surface and heat it briefly before the first meal. That is our advice, not a GSI instruction, but it is standard practice for cast iron and it costs you five minutes.
